A word about whoopies
I grew up in New England where the whoopie pie is a popular treat. They're best known in Maine and Pennsylvania but there was no shortage of them in Massachusetts bakeries and convenience stores. My personal favorite is the classic chocolate cake with marshmallow filling.
Whoopie pies aren't cookies or cakes; they're kind of like a hybrid of the two. Some of my recipes include mixing milk, baking soda and vinegar which makes me feel like I'm doing a science experiment :) The most important part of the whoopie is the filling. Like I mentioned, the classic marshmallow filling is my favorite but there are many, many types of filling you can use, like buttercream, ganache or even lemon-mascarpone, to name a few.

I received my Nielsen-Massey Madagascan vanilla and Bourbon vanilla today. I can't bake without them!

Lemon Poppy Seed Muffins
I said a while back that I was making lemon poppy seed muffins but didn't get around to it until the other day. I'm not a fan of lemon so I had a hard time telling if they were lemon-y enough; one person told me there was not enough lemon, another told me the amount was just right. I think it's better not to put too much lemon it them so I'll leave the recipe the way it is.

Big Order
Tonight I'm making a big order for PS!. Blueberry, banana and lemon muffins, marble squares and cupcakes, of course :)

Today I made a cake ball. It was supposed to be a cake pop, but I didn't have any sticks so they're more like truffles. As you can see, it's not perfectly round. I skipped the step of putting it in the refrigerator over night. I wouldn't recommend this! It was still delicious and it can be made with any cake, cookie or brownie crumble. So easy!

I finished the mosaic tile cake and I think it came out really well. The colors didn't match the counter exactly but that's ok. My friends at PS! were really happy with it and we celebrated their one year anniversary by eating some cake. Tomorrow I'll be making marble squares for PS! and some cupcakes for my friend Nick. I'll post pictures.

Lemon poppy seed muffins
So today I'm making lemon poppy seed muffins. This is my second attempt; the first time I used lemon zest and the flavor was pretty weak. Today I'm going to try lemon curd and see how it works out.

Party cupcakes
So I'm baking some cupcakes for a party tomorrow. I'll be making strawberry, vanilla and speculaas. The speculaas have proved very popular this time of year, at the last cupcake workshop there was a little argument over the last one :) I'll take pictures and post them tomorrow evening.

Muffins
So the muffins came out pretty well. I've made these muffins before but this time I experimented with a brown sugar, cinnamon and butter topping. It's tasty and I think I'll use it from now on.
In other news, I received my package of vanilla extract on Saturday. In my next post, I'll write about pure vanilla extract and imitation vanilla.
